It’s lunch time and you want something tasty but quick … I give you a 15 minute steak stir fry!
This is a rather quick stir fry it needs a few ingredients however you might not have to hand. Apart from the ginger though they keep for ages when opened. You can really make it with whatever you want and you can mix it up and get some great flavours. For me the key ingredients are carrots and courgettes.
For the sauce you’ll want:
- Sesame seed oil
- Mirin
- Rice Vingear
- Soya Sauce
- Ginger (I nearly always use fresh .. you’ll want a thumb piece size it adds a nice kick)
Chop up your ginger finely and put it in a bowl. (I keep 1/3rd to mix at the end with everything)
I generally just end up throwing in a splash of this and a splash of that. You’ll want however roughly 2 parts Soya … 1 part Mirin and 1 part Rice Vinegar. This gives a rather nice Teriyaki style sauce. I throw in a good splash of Sesame Seed Oil as well.
Chop up a steak into thin strips (150 – 200grammes goes a long way). I try to cut them as thinly as possibly .. you’ll only want to flash fry the meat.
Let the meat marinade in the sauce while you get on with the veg.
As it’s a stir fry you can use what ever veg you like.
- Cabbage / Chou Frise
- Carrot
- Courgette
- Bean Sprouts
(If you wanted you could throw in a bell pepper / mange tout / Mushrooms …)
If you’re using cabbage slice it finely. (Strips once again)
Peel a carrot. Then peel it some more keeping these peels. As carrot generally takes a while to cook doing it this way means it’ll heat up nice and quickly .. there’ll still be a bit of a bite but not so much that you’ll be munching away.
Bean sprouts (From a jar in my case … I like to rinse them well)
Half a courgette and cut into thin strips. You could also peel it similarly to the carrot. (The great thing with cooking is you’re the chef so you do things your way)
Take one sheet of noodles ( for 2 people ) boil some water … salt and throw in the noodles (They only take 3 or 4 minutes check your instructions)
Pre heat a large pan. The meat is covered in the sauce which has the sesame oil already so after a minute throw this onto your pan and stir so you brown the meat on all sides.
Once this is done throw in your veg. Mixing well and get it all cooking nicely. If there isn’t any liquid throw in a splash of water and soya) .. throw in the left over ginger (gives it a nice fresh kick) … Toss it around .. put a lid on for a minute if you want to cook the veg a little bit more. Take your drained noodles and mix.
Serve (Chop sticks add a nice touch)
All in all you should be able to put this together in less than 15 minutes.
