Finding myself home alone with the kids this week and wanting to prepare quick meals after I collect them I opted for a firm favourite last night, Salmon with Broccoli and Cream Cheese. This only needs 4 ingredients and is pretty quick to make. I’m using Frozen Broccoli here. You can use what ever type of pasta you want – Penne / Macaroni / Spirals (other names I don’t know).

Ingredients:

  1. Broccoli
  2. Pasta
  3. Cream Cheese
  4. Smoked Salmon

Method:

First things first. Get your kettle boiled.

Throw half the bag of Broccoli into a pot .. a pinch of salt and the boiled water. Cover with the lid and boil until a knife slices easily through one of the thicker stalks. (10 – 15 minutes)

Boil your kettle again and get your pasta on. Follow the instructions on the pack (pinch of salt in the water)

When your broccoli is cooked drain it. Add half a tub of cream cheese and the salmon and stir stir stir. You want it to be a bit of a mush. Add your pasta when it’s cooked / drained and stir stir stir it all around.

Hey presto dinner is done! Serve with some freshly ground black pepper and I like to add a sprinkle of parmesan cheese. The kids love this one and always want more.

Lardons de Saumon – 90g (Full Pack) – €3.19
Broccoli – 500g (Half bag) – €0.95
Fromage Nature a Tartiner – 75g (Half a small tub) – €0.45
Pasta – 300 – 400g – €0.41

Total Cost:  €5.00 (4 people)

That makes it €1.25 per person. (In truth I normally cook just that little bit extra broccoli / pasta and end up having left overs for lunch)
