This for me is comfort food that’s packed with loads of veg! The below is what we cook for the 4 of us with some leftovers for the next day. It’s an easily forgiving recipe so you can change the ingredients quite easily.
Ingredients:
300g rice ( get it cooking )
1 large onion
300g of Chair à Saucisse
2 large carrots
1 large courgette
1 clove of garlic
Herbes de Provence
You could also add in some leek/mushroom/lentils to bulk up the meat / the kitchen sink 🙂
You’re looking at needing about 40 minutes to cook this meal

Chop your onion quite finely and get it frying … after about 5 minutes add your sausage meat breaking it up into small bits on the pan. Grate your carrots and courgette (Yesterday I used the mixer to do this but it works just as well with a hand grater)
Cook it all with the lid on and a splash of water if needed … adding a pinch of salt and a good teaspoon or two of herbes de Provence mix (or your preferred herbs of choice)
When your rice is cooked mix it all together well. Add some pepper if you’d like.
Place it all into an ovenproof dish and top generously with some cheese of your choice. For me it’s Emmental. I also topped that up with a nice breadcrumb/garlic/parmesan/herb mix that I make up and have frozen…
Into the oven for 15 – 20 minutes at about 190c .. until the cheese crisps up nicely and serve.

The Sausage meat was €2.60 .. courgette 70 cents (they aren’t in season right now) .. rice about 30 cents .. 1 onion .. 2 carrots and the cheese …
This is working out at about €4.50 and would have fed 4 with 2 portions left over … except for the greedy little piggies so there’s only one portion leftover for lunch today.
