Asparagus Ingredients Raw

So I saw a request for Breakfast the other day on the KN Group and I immediately thought of this. It’s just one of those meals that’s so simple yet so tasty. Whenever I end up cooking it it’s a huge success so what the hell why not share it.

First thing’s first … get your ingredients together. For this I’ve got a pack of green asparagus from Carrefour they seem to have a special every so often and it’s €2.50 for the pack. I know I should question things … but I don’t …. ! … you’ll want salt / pepper / olive oil as well … and BACON! … in this case I’ve got some potrine fume .. it’s kinda the best you can do here … I’ve yet to ask the butcher for some bacon … maybe one day.

Get the oven on to 200C / 400F

Portion wise it’s up to you how much you want to make. I make each bunch with 3 stalks of asparagus .. 1 slice of bacon … wrap it tightly if you can … and drizzle with olive oil… sprinkle on some pepper and salt.

Chop the woody bits off the end of the asparagus BTW and wash and pat dry. Wrap the bacon around them as tight as you can.

Drizzle some olive oil over and a sprinkle of salt and pepper (Remember your bacon is probably salty enough)

Uncooked Asparagus Wrapped In Bacon

Throw them into the oven for around 10 minutes. Check how they are getting on. At this stage you can throw on a poached egg! 2 – 3 minutes will leave them runny so it’s up to you if you’d like to give them a bit more cooking time. Serve with a nice cut of buttered baguette. Charlotte wasn’t too keen on the asparagus so we skewered some baby tomatoes and wrapped the bacon around those. She tried the asparagus afterwards and ended up stealing some more of mine. All in all a big hit today 🙂

Depending on how hungry you are the the size of your stalks you’ll decide on what’s right for you. In the end we had two bundles each. They were quite thin but oh so tasty!
